A nutritional therapist friend of mine shared this recipe with me when I first started out as a weight coach. It is not only great to keep you fuller for longer, but it helps support a healthy gut by eating a diverse range of plant foods that keep your gut biome happy. More and more research is coming out that shows if your gut is happy, you are more likely to be happy. This breakfast definitely makes me happy each morning! Its also super easy to make. 

ingredients

2 cups of rolleds oats 

2 tablespoons of flaxseeds

2 tablespoons of chia seeds 

1/4 cup of seeds (pumpkin, sunflower, sesame…I love pumpkin kernels and sunflower seeds)

 1/3 cup chopped nuts (almond, brazil, hazelnuts, walnuts – I love almond, brazil and walnuts)

2 tablespoons maple syrup or honey (or a 1 of both!)

1-2 teaspoons of cinnamon

2 tablespoons of coconut oil 

Method

  1. Preheat oven to 150 degrees Celsius
  2. Put all ingredients in a bowl and mix with clean hands until the oats are well covered and all ingredients mixed together. If the coconut oil is hard use the warmth of your fingers to squish it. This will help it mix easier. 
  3. Spread out on a tray and bake in the oven for 10-15 minutes until golden brown.
  4. Allow to cool completely, then store in an air tight container. 

TOP TIPS:

Have your granola with your favourite fruit, yoghurt and milk. I love banana, frozen blueberries, full fat greek yoghurt and oat milk.

Make 2 or 3 batches of the granola in one go to save time later or to gift to friends and family.
